Help Rubber Vegetables!

Don’t you just hate it when you pull those carrots or celery out of the fridge and they are all rubbery? Then you have to chuck them into the trash. Annoying! Well the good news is, you can stop that from happening with a few simple little tips.

Chop the Top: For all vegetables that come with stems and leaves, chop those off. Anytime you leave the tops on carrots, beets, turnips etc you will pull the moisture out of the vegetable leaving you with a rubbery mess. So make sure to chop off the tops leaving 1 inch of the green stem, and then you can juice those leaves.

Don’t Wash: Washing your veggies before they go in the fridge is a big no-no. Using water just helps to aid in the decay process. The last thing you want is for your veggies to begin to go bad before you can get to them. Wait to wash them until right before you use them.

Place in Plastic Bag: One of the best tips I can give you is to always wrap your veggies in a plastic bag. I save all my bags when I go shopping so I can use them for my veggies later. Whether it is lettuce or carrots, keep those in a plastic bag and then place them in the crisper drawer.

If you forgot to follow steps #1-#3 and you pull out a limp carrot or celery stalk there is still hope.

  • Place the carrots or celery into a bowl of ice water and let sit until crisp. Or add cold water to a bowl and sit in fridge with carrots or celery until crisp. 
  • If you don’t have ice – Celery: Cut off a bit from the bottom and stick bottom down in a glass of room temperature water. Wait 2-3 hours until crisp. Carrots: Cut a bit off of the skinny end and place chopped end down into  a glass of room temperature water. Wait 2-3 hours until crisp.

  • Keep similar items together: Store your root vegetables together, and then store your lettuces together. Keep the things that expire on the same time line together.
  • Keep potatoes, tomatoes, pears, apples and other fruits that produce ethylene gas away from other vegetables so they won’t make the others bitter.
